Naani Ma's seera (prasad recipe)
Ingredients
**prep # 1 ** (sieved twice and kept aside )
Gram flour (besan ) 120 gm
Wheat flour (gheun ka atta )120 gm
Semolina (sooji) 80 gm
** prep#2 **
Mixed nuts(Chopped)& raisins - 100 gms (walnuts , almond , cashew , kishmish) ---(fry in 10 ml ghee and keep aside )
miscellaneous ingredients :-
Sugar 300 gm
A pinch of salt.
green cardamoms(Hara elaichi) 15 pieces (crushed on a belan )
ghee 300gm
50 ml chilled milk
Pinch of nutmeg
1/2 gm Saffron(kesar)
kewra water 40 ml
rose water 15ml
500ml water (can be substituted for milk)
silver warq 2 sheets .
Method :- prepare these in advance and keep aside .
**prep# 3**
boil sugar in 500 ml of water , add a few slices of lime in the boiling syrup ,keep skimming the froth from the boiling syrup, when the quantity of the water reduces to half , switch off the flame ,strain the syrup through a muslin cloth.Add the grated nutmeg kewra + rose water to the strained syrup and keep aside .
But ensure when this syrup is being added to the seera it is hot ,if needed please reheated this syrup .
**prep # 4**
add kesar to 50 ml of chilled milk and keep aside for 30 minutes
**Prep # 5**
Grease a thali or a rectangular tray (bottom and sides )with some ghee and keep aside .
Now finalize the recipe :-
*** Place a non stick pan on medium heat and add 250 gm ghee ,add the crushed cardamoms to the ghee and fry a bit , now add prep # 1 and keep stirring until the mixture turns golden and is aromatic emanating from the roasted flours . add 50 % of prep # 2 (chopped dry fruits )and save the rest for a final garnish .
***Add a pinch of salt & about 300 gm of the warm syrup (prep # 3 ) slowly and steadily ,bit by bit (maybe 50 ml at a time )and continue stirring the mixture to avoid formation of lumps in the roasted flour .
keep stirring until the syrup is completely incorporated in the mixture and the mixture doesn't stick to the sides of the pan any more .(add plain water if required)
***Add the soaked saffron (prep # 4 ) and mix thoroughly .cover and cook on steam for about 5 -10 minutes .The final consistency of the seera should be like Upma .
Transfer the mixture to a pregreased thali/tray (prep # 5)Decorate this Seera with the silver varq followed by the remaining chopped nuts and serve warm .
